Herb Roasted Lamb Chops
This is an easy recipe that is sure to please company:
6 large garlic cloves, pressed
1½ tablespoons fresh thyme leaves, lightly crushed
1½ tablespoon fresh rosemary leaves, lightly crushed
2 teaspoons salt
3 tablespoons melted coconut oil (plus one)
8 — 1¼-inch-thick lamb loin chops (eight chops come in one Costco package)
Heat oven to 375F
1. Mix first 4 ingredients and melted coconut oil in large bowl. Add lamb; turn to coat. Let marinate at room temperature for 30 minutes to 1 hour.
2. Preheat oven to 400°F. Heat tablespoon coconut oil in heavy large ovenproof skillet over medium-high heat. Add lamb (and rub any remaining oil and herbs to the tops of the lamb chops); cook until browned, about 3 minutes per side.
3. Turn down oven temperature to 350°F when you place oven-proof skillet with the lamb in the oven. Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare.
4. Transfer lamb to platter, cover, and let rest 5 minutes.
