Apple, Carrot & Raisin Salad
This recipe is yummy and easy as counting 1, 2, 3. And even picky eaters love it! I made this yesterday for a group of ladies. They all loved it and asked for the recipe. Of course, I forgot to take a photo, so this picture is of what was left-over.
3 to 4 medium peeled apples (any kind) chopped in small ½ inch pieces
4 cups cooked brown rice
1 tablespoon lemon juice
1/4 cup apple or pineapple juice
2 medium carrots grated
2 stalks celery, chopped
1/2 cup raisins
½ cup mayonnaise (Mayonnaise spoils easily, a ¼ cup lemon juice and a tablespoon of honey may be substituted when making this salad for lunch bags or picnics.)
1/2 cup walnuts or pecans
1) In a medium sized bowl mix tablespoon of lemon juice and pineapple juice with the chopped apples. Stir to prevent browning.
2) Mix in the grated carrots, celery, raisins, mayonnaise and brown rice. Add walnuts.
3) Stir well. Serve chilled.
