Saving money by cooking from scratch isn’t all drudgery. Making desserts and snacks can be fun as well as healthful. The problem with most recipes can be that they take too much time out of an already busy schedule. These don’t!
I saw this recipe on Dr. Oz’s show this week. It looked really easy and my grandson was coming over. I quickly threw a batch of these No-Bake Energy Bites together. They are so easy, even your kids can make these by themselves and they are very tasty!
The great thing is you can add or change the ingredients to your liking. I had almond butter in the refrigerator, not peanut butter, so I used that. It was chunky almond butter. I realized that adding some sliced almonds would make this even more yummy. If you don’t have tart dried cherries on hand, use raisins or other chopped dried fruit.
We gobbled these up so fast;

No-Bake Energy Bites
1 cup oats
1/3 cup dried tart cherries or other dried fruit chopped fine
½ cup peanut or other nut butter (optional: add 1/4 cup chopped nuts.)
¼ cup honey
1 teaspoon vanilla
1. Mix all ingredients together in a bowl. (If the honey is solid, slightly heat it.)
2. Spread the mixture in a 9X9 inch pan and refrigerate for two hours before cutting into squares.
