Guilt-Free Holiday Eggnog

This time of year there is so much sugar! Keeping it to a minimum is difficult for every mom.

I love eggnog. I love it sooo much, I could drink a pint at one sitting. Even though my weight is never an issue, consuming large amounts of sugar is inadvisable for anyone. Usually, eggnog is loaded with white sugar.

Eggnog is really a liquid custard. I’ve been tinkering with an eggnog recipe that everyone will love (especially if you have a diabetic in the family). I’ve even made this recipe with goats milk and it’s just as delicious! You could substitute any non-dairy milk product if you are lactose intolerant.

Guilt-Free Holiday Eggnog

You’ll Need:
3 cups whole milk separated
1 tablespoon arrowroot powder
3 packets Stevia
2 eggs, beaten
1 teaspoon vanilla
¼ to ½ teaspoon ground cinnamon
Ground nutmeg

Method:
1. Mix 2 cups milk, arrowroot, and Stevia in a saucepan; heat to boiling. Keep at a low boil, stirring constantly over low heat for about half a minute.

2. Beat eggs in medium bowl. Mix 1/2 cup chilled milk into the eggs; then slowly add hot milk to this egg mixture. Bring back to a low boil in saucepan.

3. Remove from heat and stir in remaining 1/2 cup milk, vanilla and cinnamon. Cool to room temperature; refrigerate until thoroughly chilled. (Some like to drink eggnog warm.) Sprinkle each serving lightly with nutmeg.

Variation: If desired, 1 to 1½ teaspoons rum or brandy extract can be stirred into the eggnog.
