I’ve been toying with different recipes for organic TruRoots Sprouted Bean Trio (which I found at Costco). This is great pantry item and I wanted to have several different go-to recipes. I made this 3 Bean Turky Chili last week and it was a big hit. In fact, it’s my favorite Bean Trio recipe thus far. Click Here for my Bean Trio and Roasted Potato Curry.
3 Bean Turkey Chili
(Pre-Cook 1 cup of TruRoots Organic Sprouted Bean Trio according to package directions)
½ cup cooked TruRoots Sprouted Bean Trio
3 tablespoons coconut or olive oil, divided
1 pound ground turkey (or chicken)
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon dried cilantro
3 minced garlic cloves
1 cup chicken broth
1/2 cup salsa
1 (14.5 ounce) can crushed tomatoes
1 cup peeled and diced carrots
1 medium onion, finely chopped
1 medium zucchini, shredded (or 1 cup chopped green beans)
1 teaspoon salt
1 tablespoon Costco Organic No-Salt Seasoning
1 cup shredded raw cheddar cheese
1 cup sour cream
4 green onions, chopped
Note: For a little heat, you can add chilies, jalapenos or Tabasco sauce to taste.
1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Add seasonings: cilantro, oregano, paprika, chili powder and mix until meat is evenly coated with seasonings. Continue cooking, until turkey is well browned.
2. Remove cooked turkey. Heat two tablespoons of oil in the skillet over medium-high heat. Sauté onion and garlic, stirring occasionally for 5 minutes, or until onion is translucent. Add turkey and cooked bean trio back to the chili.
3. Pour in broth, add salsa, tomatoes, zucchini and carrots; continue cooking at a moderate simmer for about 30 minutes.
4. Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.
